Takoyaki
At the Miyagawa Morning Market in Takayama we tried a number of different items from the foods stalls lined up along the river. Everything was good! The video below shows Takoyaki being made. Takoyaki (たこ焼き or 蛸焼) is a ball-shaped Japanese snack made of a wheat flour batter and cooked in a special molded pan. It is typically filled with minced or diced octopus (tako), tempura scraps (tenkasu), pickled ginger, and green onion. They serve it with some mayonnaise and bonito flakes (finely shaved fish bone that tastes smoky) on top.
